Wild Merry's Wild Mushroom Bisque

As everyone knows, hobbits have a passion for mushrooms surpassing even the greediest likings of Big People. As a youngster, Frodo had been caught trespassing for mushrooms on Farmer Maggot's land and had been chased off by his dogs. Merry and Pippin continued to pilfer mushrooms and other vegetables, even though Merry was on quite good terms with the old farmer. Years later on his flight from the Shire, Farmer Maggot helped Frodo, Pippin and Sam reach the Buckleberry Ferry unseen and even gave Frodo a parting gift: a huge basket of mushrooms. A light moment in a dark and dangerous time.

Merry took the basket of mushrooms and whipped up a number of dishes from the bountiful gift. Among them was this delicious soup flavored with the woodland herbs that grew nearby. It was a last taste of the home they were leaving behind.

  • 2 Tbsp vegetable oil
  • 3 large onions, diced
  • 10 oz / 300 g large button mushrooms, sliced
  • 4 large portabella mushrooms, diced
  • 8-10 dried shiitake mushrooms, rehydrated with water and diced
  • 1 cup beef broth or stock
  • tsp dried marjoram
  • tsp dried thyme
  • Ground pepper and salt to taste
  • cup heavy cream
Saute the diced onions in a dutch oven until softened. Add the mushrooms and stir. Cook down till mushrooms are softened. Add the beef broth and marjoram, thyme, salt and pepper and simmer for 15 to 20 minutes.

Remove two large ladles of the mushroom and onion mixture and set aside. Ladle the rest of of the mixture into a blender and puree until smooth. This may need to be done in more than one batch depending on the capacity of your blender.

Return the pureed mushroom mixture to the pan and add the cream, stirring to mix thoroughly. Taste to check the seasoning and correct if necessary. Add the mushrooms removed earlier to add texture. Garnish with parsley or snipped chives. Serves 6-8.

Note: Any combination of mushrooms -- wild or tame -- are welcome in this dish. If you are using wild mushrooms, be sure of your source and wash them well!
