Skywalker Legacy Rooster Beak Relish

The Skywalker family is strong in the Force, but not strong in other ways ... Leia had inherited much of her mother's focus and her father's determination. In contrast, her twin brother, Luke, seemed to inherit what could politely be termed the less desirable characteristics of both parents: righteousness, whininess, dependence, and a tendency to be impetuousness.

By the time Mara Jade said, "Yes," to Luke's proposal of marriage, they had not dated at all. They had known each other for over a decade, but had not spent any time together as a "couple." One of the reasons for this was the ongoing after-effects of the Galactic Civil War, and the fact that Mara Jade had been ordered to kill Luke Skywalker ...

She didn't like Luke's undesirable traits, and once she learned he was the son of Darth Vader, she saw all the things she hated about the Sith Lord in this farmboy from Tatooine. But over the many years where the two had watched each other become involved with others, Luke gained confidence and wisdom to offset his goofy passion, and Mara had mellowed to be more compassionate and less militant.

Leia saw her brother and his fiancé "grow up," whether they knew she was observing or not. She saw both of them suffer broken hearts and shattered ideals; to everyone else, it seemed that the two were suited to each other, if only because there was no one else in the galaxy who could come close to understanding them.

There was a little party for friends and family when Luke and Mara announced their engagement, and Leia had C3PO create this relish because all the parts were "separate but equal" and "better together than apart, but still retained their individual identities." Count on Leia to put symbolism on a dinner party offering! Mara countered Leia's toast by pointing out that this relish used "mature, experienced ingredients, with spice!"

It bothered C3PO (who had formerly belonged to Leia and Luke's parents, though he didn't have a coherent memory of this) to make this dish, though he did believe this recipe was something related to Leia and Luke, even though he couldn't say why. Later, after Mara found herself carrying Luke's child, she made this simple-to-assemble concoction to nourish herself — it went well on grilled meats or seafood or tofu, and was a good, fresh dressing for a salad or on a simple meal of bread and cheese.

Ironically, this was a dish on which Padmé Skywalker had imbibed when she was carrying her famous twins, thus C3PO's memory trigger. R2D2 told C3PO that it was called "Rooster's Beak" for the "bite" it gave to all manner of food, and explained that it was meant to represent a sharp peck, a reminder of a man's presence in a woman's life, while he was away ... (C3PO had no idea what R2 was referring to, but of course, those who have viewed the prequels do!)

Luke, of course, wondered, "What's a rooster?"

  • 2 lbs / 900 g ripe tomatoes, chopped (do not seed or peel)
  • 1 medium white or sweet onion, chopped
  • 1 to 2 cups fresh cilantro leaves (also called "Chinese parsley" or fresh coriander)
  • 4 to 10 fresh jalapeño or serrano chilies, minced (if you like it spicy, include the seeds and ribs of the chili — and if you prefer less "hot" then remove the seeds and ribs before mincing)
  • ½ to 1 cup ice water, to taste
  • salt, to taste
  • lime juice, to taste
In a bowl, carefully mix together the tomatoes, onion, cilantro, chilis, and the ice water, starting with ½ cup and adding more to "loosen" up the texture to suite you. Don't overstir or be too vigorous, the parts of this salsa should be quite separate from each other and chunky, not mushy. Add salt and lime juice to taste. Refrigerate covered until you need it.

Makes about 6 to 8 cups of salsa.
