One Potroasted Chili by Two Dads

Hobbie's wife (in Csillag's AU Hobbie's Saga is a career working woman, and being a military pilot, he was often home for long stretches of time. During such furloughs, he'd take over all the domestic chores. Not only did it help his wife out, but he rather liked "playing house" after being in battle. He told Wes that it gave him reminders of what he was fighting for, as if he needed such reminders.

Wes would come over from time to time to imbibe in Klivian family life. In Csillag's tale, he's married and a father, too, so the two men would swap ideas and recipes. "Look at us," laughed Hobbie, "we're like two women trading recipes and gossip over the fence!" Wes had to agree, "But also advice ... didn't you make this potroast like four times this week already? Don't your kids rebel?"

"Come to think of it, yeah ... the kids told me they like it, but could we try something else ... Darn it, I forgot, now what am I going to do with all this browned meat??" Hobbie had spent much of the morning cutting, trimming and browning up a beef potroast.

"Elementary, my non-thinking idiot friend! Wes Janson to the rescue!" Wes managed to duck a swipe by Hobbie's spatula for that one. But his suggestion to make an easy "man-can" (open cans and packets, dump contents into the pot) type of spicy beef stew was a big hit with Hobbie's kids that Wes tried it out with equal success on his kids, too!

  • 3 lb / 2¼ kg beef potroast
  • 1 packet onion soup mix
  • 14 oz / 400 g can kidney beans
  • 14 oz / 400 g can red beans
  • 14 oz / 400 g can diced tomatoes
  • 1 large onion, chopped
  • 1 packet chili seasoning (or mixture of spices to suit your taste)
  • 2 cups water
  • 1 tablespoons stock powder
Cut potroast into half inch wide slices, then cut slices into one inch wide strips. Brown meat in a dutch oven over medium high heat. Do half the meat at a time otherwise it will exude too much moisture to brown properly. When browned, put all the meat back into the pot, add onion soup mix and stir to coat all the meat evenly. Drop heat to low, cover and cook for about one hour. Add package of chili seasoning and stir to coat the meat. Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 30 minutes. Serves 6-8.
