Eveningwear Supper (Mock Tikka Masala)
Mara Jade was a favorite of Palpatine, but not just because she worked hard and he had trained her from toddlerhood to become the ideal assassin. He loved her, and enjoyed having her accompany him to the opera, which gave him an excuse to insist she dress up.
To thank him, Mara knew her master liked nothing more than to share a simple meal with her. But he did like seeing her in the finery she wore to go to the opera, so she devised a very simple supper dish which could be made with the slinky dress and long white gloves and heels on. Open a bunch of cans, stir, heat, and that's all! It was nourishing and comforting, and it smelled wonderful, and the only thing Mara had to worry about with this meal is not to get any of it onto her finery.
If you have a rice cooker, you can use it to make this dish. If not, select a large pot with a heavy bottom. Wash the rice by rubbing it and draining it well through a colander. Place in the pot with the water, cardamom, cumin, salt, and bay leaves. Put a lid on the pot and bring it to a boil, then reduce the heat to a simmer. Cook for about 15 minutes, or till the water is soaked up into the rice and looks dry. Leave the lid on for another 15 minutes. After that, fluff up the rice and serve.
- 2 cups rice
- 4 cups water
- 1 tablespoon cardamom pods
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon salt
- 2 bay leaves
Makes 5 or 6 cups of rice.
Mock Tikka (from Cans)
In a large pot, put all the ingredients into it, using a rubber scraper to get everything into the pot. Stir together to combine and heat till it starts to boil. Serve with hot rice. Makes about 6 quarts.
- 1 can x 18 oz / 500 g coconut cream (non-sweet!)
- 4 cans x 10 oz / 280 g curried mock chicken
- 1 can x 6 oz / 110 g tomato paste
- 1 can x 14 oz / 400 g diced tomatoes
- 3 cans x 11 oz / 300 g condensed tomato soup
- ½ cup tikka masala seasoning
- salt, to taste
