Too Ripe Mango Peach Chutney

In his capacity as base manager, Booster Terrik traded and sold many things to: 1) keep the commercial space station profitable and 2) fund the Rogues in their private war against Ysanne Isard. One shipment, from Derricote's old operations on Borleais, was of fresh fruits and vegetables. Booster was not able to trade or use it all before a lot of it started to overripen.

We all know Emtrey (M3PO) was programmed to prove that Tycho Celchu was a spy. But even after the good captain was found innocent and Emtrey deprogrammed, the droid kept his superlative scavenging abilities. Emtrey, hating lost opportunities and waste, assessed what they had before Booster could throw it away. Emtrey found too many soft kiwifruit, cases of mango so overripe they practically peeled themselves, lots of peaches, onions, some lemons and limes. He had in his stores acetic acid (strong vinegar), some dried fruit rations and spices, and came up with ideas for two kinds of chutney: mango-peach and kiwifruit, He served them with cold meats, hot roasts, or as a savory-sweet filling for rolled, stuffed dishes.

The bottled preserves grew to be so popular among variety-starved starship crews that he was able to trade pint jars of the condiment for war materièl, thus making this nearly-lost opportunity a profitable and tasty one!

  • 1 lime, cut into quarters and frozen
  • 1 1/2 cups white sugar
  • 1 1/2 cups white vinegar
  • 1/2 cup onion, chopped (about 1/2 medium small)
  • 1 clove garlic, minced
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground mace or ground ginger
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup raisins
  • 3 large ripe mangoes
  • 2 pounds peaches (about 4 to 6)
Before freezing the lime, wash the skin and remove the stem bit, pat dry, then cut into wedges and discard seeds. When frozen, you'll find the lime much easier to slice thinly. Place on the bottom of a large, heavy pot.

Over the limes, dump in sugar, vinegar, onion, garlic, cinnamon, salt, cloves, mace/ginger, cayenne pepper, and raisins. Over high heat, bring the mixture to a boil. Reduce the heat to low and allow to simmer uncovered, stirring occasionally. The onion should be cooked through and the whole mixture a bit thickened. This takes about 20 minutes or so.

Peel and slice mangoes off their pits and chop fruit coarsely. Peel, pit, and roughly chop peaches. Add the fruit to the simmering syrup and cook with stirring till the peaches are cooked through and tender, about 30 minutes.

Ladle chutney into clean jars. Cover and refrigerate. Keeps for about 2 weeks this way. Or they can be preserved, if you know how. Makes about 5 pints.
