Too Many Kiwis Chutney

Emtrey, the Rogue's quartermaster, came up with this recipe when Booster couldn't trade or use up a shipload of fresh fruits. See the recipe for Mango Peach Chutney for details. This chutney is excellent on leftover meats of all sorts, even Thanksgiving turkey!

  • 2 cups white or cider vinegar
  • 2 cups brown sugar, packed
  • 2 teaspoons salt
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cayenne pepper
  • 2 apples, peeled and chopped
  • 1 cup sweet onions, thinly sliced
  • 1 cup raisins
  • 1/2 lemon, thinly sliced
  • 16 to 20 kiwifruit, peeled and chopped
In a big pot, add vinegar, brown sugar, salt, ginger and pepper and boil over low heat until the volume is halved. Add the apple, onions, raisins and sliced lemon (see Mango Peach Chutney recipe for a note about slicing limes ... use the same suggestion for lemons). Cook for 10 minutes until the apples are cooked. Add in the kiwifruit and bring the mixture to a boil.

Place into jars and cap. Allow to cool, then refrigerate. The mixture will thicken on colling. Keeps for a couple of weeks. Can also be canned/preserved.

Makes a bit more than 2 pints.
