Skywalker Twins' Salads: Celery and Oranges

The original Skywalker twins grew up separately, but both loved celery and oranges curious, no? Leia's favorite treatment was to use fennel a celery-like vegetable with an orange-flavored dressing, tinted with hot pepper flakes and sesame oil. Luke learned to love a relish-like salad, containing cubes of cheese and the grated orange rinds in the dressing. Their dressings are actually complementary Leis'a recipe used the juice of the orange, and Luke's the rind. Both are wonderful, even served in the same meal.
Virtuous Sesame Orange Salad Dressing
In order to preserve her figure, Leia was raised on low-calorie foods. But the low density of calories meant she sometimes ate huge quantities to be able to have the energy of growing as a child. Unfortunately, her desire to consume large quantities would force her growing body to get chunky if she did not eat the elegant fare of the royal table.
In her years on the run, she learned to eat what was put before her, which was often meagre or fatty fare. One of the things she missed from her old life was salad with a tiny bit of dressing the calories were all in the dressing. Back then, now and again, she wanted her dressing more like a naughty soup a big bowl of it, with a mountain of fresh vegetables inside of it! It was her way of treating herself to what she deemed a full and satisfying meal, without the risk of expanding her body too much.
She liked this dressing,which had a stronger acid, a very mild and sweet acid, and relatively little fat. She'd also done away with the olive oil too, to reduce her calorie intake further. She'd put crunchy shaved or thinly sliced raw vegetables into the "soup" and feel virtuous yet satisfied!
How much it makes depends on how big your "part" is, of course. The dressing can be kept in the refrigerator for a few days.
Celery Relish with Mustard Orange Vinaigrette
"Your father was not one to worry about where food came from, but he enjoyed it a lot and ate copiously," Kenobi spoke gently, knowing that talk of his father would always rivet Luke's attention. "He learned that some things agreed with him, and others did not. And he learned that a few spoonfuls of relish could make any bland food palatable, transcending it beyond mere nutriment."
"Is that what you're making? Relish?" Luke was wide-eyed with fascination. Perhaps he was eating something his father had eaten! Later, packed into a sandwich, he admitted the sauce/salad really woke up his palate and made him appreciate the otherwise tasteless and textureless space rations. And he admired how Ben had made this out of things he'd found in the Falcon's galley, as they made their escape from Tatooine.
Yields about ¾ cup dressing. Keep it in the refrigerated, covered well.
