Breakfast Quesadillas

It was decided that since Harry Potter and the Chamber of Secrets was due out on November 15, and Star Wars: The IMAX Experience was also in the 'hood, it would be a fabulous idea to have a Mini-Con and Movie-Fest. SW was shortened by about 20 minutes (see Diana's review), but the Potter movie is just about three hours long! A lot of movie viewing! So when it was time to eat, we were a bit bleary and wanted something fast (we resisted the overpriced concession fare) and something even the picky will eat with relish. This breakfast quesadilla was just the thing ... and while some WookieeHut members were doing homework, Diana doodled, and came up with a recipe/poster illustrating the recipe, below. Enjoy, and eat too much ... we did!

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • ½ lb mushrooms, chopped
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • about 3 cups cheese, grated (we used mozzarella and sharp cheddar)
  • 3/4 cups chopped fresh herbs (we used parsley, basil, marjoram, rosemary, thyme, tarragon, etc.) or 4 teaspoons dried herbs
  • 6 eggs, beaten
  • 10 flour tortillas
Sautée the onion and garlic till translucent, then add pepper and mushrooms. Cook till softened. Set aside and wipe out the pan. Scramble the eggs in the pan. NOTE: if you use a nonstick frypan or skillet, you do not need butter or oil; otherwise, add a tablespoon to prevent sticking.

Place one tortilla on a plate or board. Spread about ¼ cup cheese within ½ inch of the edge of the disc, then layer with the cooked vegetables, 1/5th of the egg (chop up if necessary to make it easier to "sprinkle"), then diced tomatoes, then 1/5th of the herb mixture, then top with another &188; cup cheese. Place another tortilla over this (making a sort of sandwich) and press lightly to get the filling to be even in height. (Lumpy quesadillas tend to fall apart and don't heat evenly.)

Heat a griddle or large skillet, dry. When hot enough to steam water droplets that are sprinkled over it, carefully place one "tortilla sandwich" flat onto the hot surface. Don't burn yourself! When the tortilla is crispy and browning, carefully flip over the "sandwich" and do the same to the other side. The cheese should be oozing and melted (and is very hot!); carefully lift onto a cutting board. With a sharp, long knife, using a "guillotine" motion (rather than a 'sawing' motion), cut like a pizza into quarters or eighths. Pile onto a warm serving platter and serve. If you wish, you can accompany these with guacamole, salsa, sour cream, etc. But by themselves are a good breakfast!

To make it a lunch or supper dish, delete the eggs. Add chicken if you wish! Wow.

Serves 10 to 20, depending on whether its a meal or a starter.
